PIZZA OVEN FAQ’s

What is a wood burning oven?

A wood burning pizza/bread oven is an oven made out of clay adobe, refractory fire bricks or refractory cement (heat resistant mix made from ingredients that can withstand prolonged high heat conditions). Traditionally, ovens were made using material that wasn't costly and was easy to obtain in nature. Nowadays, we have everything we need to build a wood oven readily available in most refractory and building store yards.

How does a wood oven work?

A fire is built inside the and as it burns, the 5”-7” thick oven walls absorb the heat. Our ovens have a 3” layer of refractory cement and a 3” layer of insulating refractory cement with a layer of stucco on the outside

During the firing, the oven door (if you have one) is open and the flue of the chimney, ( if there is a chimney), is also left open. After a couple hours, having used dense woods like oak, you can either push the coals to the side or remove them from oven. The oven then needs to cool down a bit before starting your cooking projects. At first, the oven is around 800°F or 425°C perfect for making fast in 90 secondsthin and crispy pizzas, however very nice pizzas are being done also in 300°C - 572°F temp, but it's still too hot for bread. When the temperature has dropped to around 450°F or 230°C, then it is time to put big roasts and other large meals in. Bread goes in last so it doesn't bake too fast on the outside.

Pizza, bread, cakes, sausages, meat, cookies bake from the heat of the wood fire stored in the walls of the wood oven. Heat is spread around by radiating out ……..all of the radiant heat absorbed by the oven floor and walls is now slowly radiating out, efficiently and evenly.

How long can you cook in a wood burning oven?

This depends on how well the dome of your wood oven is insulated on the outside, and also on how much wall mass the oven has . After heating up the very massive oven walls get hot enough to cook easily for a whole day.

What would it cost?

Pricing varies and we offer a few different options. The least expensive is the DIY Pizza Oven Kit. This option includes a preformed oven dome made of refractory cement, ingredients to form the insulation layer over the oven, a door and directions on how to construct and use the oven. The kit runs about $600 plus shipping or delivery. The second option is to have us build it for you which generally runs around $ 1200. If you want to add a fireplace below the oven which is a popular option, add approx. $600.
